Hi EmmaI am sorry I can't be there on the day, but may I recommend a recipe? It is a lovely spring soup and very cheap to make. See what you think:Ingredients:~ 1/2 litre vegetable stock~ 1/2 carrier bag nettle tops (try and get young plants so best done March - May)1 large onion chopped1 large carrot chopped1 tablespoon olive oil1-2 tablespoons boiled rice or chopped potato2 -3 tablespoons soya creamsalt and pepper to tastegently heat oil in a large sauce pan soften onion (don't brown)add carrot and soften add stock and pile in nettles on top. press down to submerge with a wooden spoon.season with salt and pepper, place lid and simmer for ~ 15 mins.Add boiled rice or potato (or add raw rice at same time as nettles).place in a food processor and churn until smooth (hand blender is ideal)Stir in soya cream and serve with freshly ground black pepper on top.tips:nettles grow almost anywhere but the best ones are often in damp ground next to streams. Ever noticed stings are more painful if stung trying to cross a stream? Could be because the plants are stronger there. All good soups are dependent on the quality of stock. You can of course buy stock cubes, but these are not much good. Better to make a stock:1 litre water1 onion chopped2 or 3 sticks of celery chopped1 large carrot choppedthe green part of a leek (not essential)1/2 glass white wine (not essential but gives much better stock)1/2 lemonbouquet garni (preferably not a bag, better to have a bunch of bay leaf, thyme, rosemary, parsely)a few black pepper cornssalt and pepper to tastesoften all vegetables in a large sauce pan (gently heat for 3-4 mins). Add water and all other ingredients & squeeze lemon over it.Simmer for 10 -15 mins.Strain liquidSorry if this is teaching grandmother to suck eggs.
