I uploaded a couple of pages onto my site and linked to them from the
homepage.  At the time of upload, I didn't have title/meta tags on my
page (long story), and I went back and added title/meta tags about 3
hrs later.  Google cached the version without title/meta tags, and
it's been about a week since and it still hasn't been updated in
Google.

Any guesses on how long it takes?  It seems like Google's quick to
"realize" new pages are being uploaded, but slow to "realize" changes
on existing pages?

It could take 24 hours, it could take 2 months.

Expect about 2 weeks, if this is a moderately active site with pages
and links regularly added.
